Shave most of the lime rind into peels, place in cold water until they curl. Set aside for garnish. Slice lime into wedges. Pour sugar into a bowl, take 1 lime and run it along the rim of champagne flute, dip rims into sugar to coat. Pour 1 tablespoon of tequila and squeeze the juice of one lime wedge into each glass, top with champagne. Garnish with lime curls. Use simple syrup for a little sweetness!
